One of the surprising things to me so far is the number of times that the game has surprised me. So finish this sentence, "I was most surprised when ...". There have been many surprises but two that I keep thinking about are:
... I logged in at a base camp out in a swamp and the place had completely been taken over by bandits. They fought and kept assaulting that camp for a long time. (I think this one was actually a bug)
... I was fighting the mole people (dredgers or something, don't remember name) and there were two seraph guards at the border of the event and they would carry on conversations and what not but eventually one of them broke into song and was singing a tune. Amazing.

The first thing that came to my mind is how good the personal stories are and the fact that you actually make choices.
Also, the way there are mini jumping puzzles to get to some of the vistas. I think that's awesome.

I knew I was going to try out GW2, but even though I pre-ordered I didn't do any of the Beta and tried to only watch limited video and such, just to keep it all new.
I love the Vista hunting, it adds a bit of fun to map exploring. The Fire Elemental in Metrica was a not so pleasant surprise, in a good way.

I was most surprised when I was running to a copper ore node and someone beat me to it....it was like WoW all over again, but then it didn't disappear, and i could still mine it!

When I first discovered that WvWvW has a scale of PvP epicness that has not been matched by any other MMO, featuring awesome little mini-events and exploration challenges as well as gathering to make even the PvP experience diverse. I could play that for weeks.
When I first fought the massive swamp boss at the end of Queensdale. Who would have known that a level 15 can take on bosses bigger than raid bosses in WoW at level 15? Now that's impressive.
When I discovered you can instantly deposit collectibles into an account-wide collectible bank that can be accessed from anywhere in the world, thus making crafting a blast in this game.
Many more to come. This is my favorite MMO ever. Period.
